Cheese Wax
All cheese waxes conform to FDA standards, all products are approved for direct contact with food. Packed in 11 lb. slabs. Application: For uses with a two coating tank system, superior performance is obtained by coating cheese with two thin coats of wax rather than one thick coat. A clear colored cheese wax is recommended for the first coat. The primary coat tempearature of 104 to 110 C. and second coat applied at temperatures of 76 to 88 C. The higher the temperature, the thinner the coat applied. For one tank system, wax is usually coated at an intermediate temperature of 82 to 100 C. The first coat will have some unevenness. The second coat will result in an even coating.
